1. What inspired you to start The Low Carb Co?
I was managing Type 1 Diabetes alongside Addison’s and hypothyroidism and I could not find a snack that tasted great, had clean ingredients, and actually helped with blood sugar control. Stable blood sugar is at the core of my physical and mental wellbeing. When it’s off, I feel anxious, depressed, exhausted, and unwell. Then I met a girl and fell in love- and the best part? She’s a chiropractor who helped me understand the power of a low-carb lifestyle. That changed everything. I started experimenting in my own kitchen and created a snack I could trust. Now, our team is on a mission to help others snack with confidence and take control of their energy, mood, and metabolic health.

 

2. What makes your product unique?
Our superseed crackers deliver 20g of protein and 18g og fiber, only 6g net carbs, and zero added sugar- all in a light, crispy texture. Most seed-based snacks are dense or gritty. Ours are light, airy, crispy, fluffy, flavourful - the list goes on...they are truly enjoyable. Yes, the health stats are impressive, but it’s the taste and texture that people fall in love with.

 

 3. What problem are you solving for consumers?
So many people struggle with energy crashes, cravings, and blood sugar spikes-largely because most snacks make those problems worse. We offer an alternative: clean, nutrient-dense snacks that actually support satiety, steady energy, and better metabolic health.

 

4. What personality or story do you want to share?
The Low Carb Co is built on real, lived experience. I am not just a founder. I am someone who relies on my own products every day. My journey with diabetes and metabolic health is baked into everything we do. We’re not just selling snacks; we’re helping people build healthier habits, one bite at a time.

 

5. Who is your ideal customer?
Our customers are what we call “metabolic health warriors.” They’re parents managing busy households, athletes fueling performance, diabetics and pre-diabetics looking for better choices, and anyone who wants to eat with intention and feel better doing it.

 

6. What’s your brand vision?
We’re building a future where functional snacking is the norm- not the exception. As more people begin to prioritize metabolic health, our goal is to meet them where they are: through trusted retail partners like LCG, online with Amazon, and soon in the convenience space.

 

7. What’s one thing about your brand that really surprises people?
A lot of people are surprised to learn that we’re diabetic-owned. My personal story adds a layer of authenticity and trust that’s hard to replicate. This isn’t a trend play- our products come from real need and real life.

 

8. What are your goals for working with LCG?
We’re excited to scale across Canada with LCG’s support- getting into more stores, reaching more people who care about clean, functional nutrition, and supporting our retail partners with demos, education, and impactful in-store experiences.
