Cassava Flour Banana Muffins

These make the perfect midday snack that anyone can enjoy! Made with Otto's Naturals Cassava Flour, they are nut, grain, and wheat free. The irresistible texture you get from cassava is unlike the dense, crumbly textures you sometimes get with other gluten-free flours. These muffins hold together well and have a great moisture content.

Choosing the right sugar or sugar substitute will also affect the flavour of these muffins. We opted for Camino Whole Unrefined Muscovado Brown Sugar because of it's rich, molasses-like flavour, indicative of a high mineral content. We also suggest avoiding refined sugars such as traditional table sugar or brown sugar for healthier recipes like this one. You can use a natural sweetener insetad, or something like coconut or maple sugar which have lower glycemic indices!

Ingredients:

  • 2 bananas (about 1 ½ cups when mashed)
  • 2 large eggs
  • ½ cup avocado oil or other neutral oil
  • ¾ cup Camino Brown Muscovado Sugar
  • 1 teaspoon vanilla extract
  • 1 cup (150g) Otto's Naturals Cassava Flour
  • ½ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon of sea salt

The key to this recipe is going heavy on the spices! Adding more than a pinch of sea salt and cinnamon amplifies the flavours in these muffins, making them taste addictively awesome.

Your choice of oil will also affect the taste. Avocado oil is great because it has a very neutral flavour in cooking and baking and is full of healthy polyunsaturated fats! For a "nuttier" flavour, try coconut oil! Sunflower oil will also impart a unique flavour to these, and is rich in Vitamin E.

Baking Instructions:

  1. Preheat your oven to 350 F. Line a muffin tray with 12 muffin liners.
  2. In a large bowl, mash the bananas with a fork until you reach your preferred consistency (this can range from smooth and runny to chunky – both will work!)
  3. Whisk in the eggs, avocado oil, Camino Muscovado brown sugar, and vanilla extract.
  4. In a separate small bowl, combine Otto’s Naturals Cassava flour, baking soda, baking powder, salt, and cinnamon.
  5. Stir the dry ingredients into the wet ingredients until combined. Pour the batter into the 12 muffin liners. Top with 1 slice of fresh banana on each muffin.
  6. Bake for 30 minutes, or until golden brown and completely baked through. Allow to cool for 10 minutes before enjoying!
